Produced in limited quantities, these whole artichokes with the stem are harvested only in the early spring, then painstakingly processed by hand to keep them intact. These artichokes are lightly seasoned and packed in olive oil. Perfect in salads, roasted with fish or poultry or eaten simply as an antipasto.
