Made exclusively from Picholine olives, this oil is medium-bodied, fruity, with clean hints of green tomatoes and fresh cut grass.  The taste is rich and structured with a pleasing peppery and bitter finish. The Picholine olive, in addition to yielding beautiful oil, is naturally high in antioxidants, allowing it to retain its flavor and freshness and giving it a longer shelf life than many other oils.
