A simple and easy to make risotto with dry porcini mushrooms.  Made with Carnaroli rice, this risotto cooks in 18 - 20 minutes and will be perfectly creamy.  Serve with parmigiano reggiano cheese.  The finest carnaroli rice grains come from the Piedmont region of Italy.
