Prickly pears, sometimes referred to as cactus fruit, are a popular fruit found all over southern Italy, especially on the island of Sicily.  Tudia uses the freshest Sicilian fruit, cane sugar, and lemon juice to prepare this wonderfully delicate fruit jam. The flavor of prickly pear jam is light, bright and sweet; reminiscent of summertime itself.
